The "Talò" Salice Salentino is produced by San Marzano, one of Puglia's most important and renowned wineries. Its wines reflect a splendid terroir and a desire to showcase its excellence through local native grape varieties. The Negroamaro and Malvasia Nera di Brindisi vineyards are located in the San Marzano area, at an altitude of approximately 100 meters above sea level, on stony soils composed of clay and sand, resting on deep substrata of limestone. This wine embodies the essence of Sicily, with an alcohol content of 13%. The clayey soil on which the vines grow gives the wine a robust and complex structure. Maceration and fermentation take place for 7 days in stainless steel tanks, followed by a complete malolactic fermentation. Valpolicella Ripasso Superiore Morandina 2017 is a fine natural wine from Veneto, produced by Graziano Prà. The grapes used are native Corvina, Corvinone, Rondinella and Oseleta. The name derives from the technique of passing the grapes during fermentation in the Amarone pomace, with maceration lasting 5 days. A fine wine without sulphites, it has an intense ruby red colour, with some purple nuances, the nose is intense with prevailing notes of berries and spices. In the mouth it is full-bodied and well balanced, with a present but delicate tannin. Persistent and complex, it should be paired with grilled meat dishes and mature cheeses.

The name originates from a vineyard that has always been called by local farmers, "Core" in Sicilian means heart. In fact, the vineyard seen from above has the shape of a large heart. The soils are sandy loam, with abundant volcanic rock. The grapes are harvested by hand during the first half of October, and the vinification process involves maceration for approximately 18 days, followed by 3 months of aging in oak barrels. Fragrant fruity and floral notes anticipate a full-bodied and elegant palate.
