It starts from the selection of noble raw material, leg of heavy Italian pig from the supply chain. After leaving it to mature, it is salted as it was once done with "vein syringing", a slow manual process to allow the diffusion of the brine into the muscle tissues. The leg is soaked in the same brine for a few days, then massaged to absorb the aromatic infusion and then deboned by removing the bone. The tying is done by hand and the steam cooking takes place slowly without using any mould, to preserve the softness and flavor of the meat. The result is a cooked ham with a unique shape that recalls the original leg, with a full and at the same time delicate flavour, in short......Delicious! Giuseppe Villani
