In fact, the greater concentration combined with the secure structure of its acidity allow the grapes to be vinified with unusual refinement prospects for a white wine. The must ferments in steel at carefully controlled temperatures. The wine rests in steel tanks for at least two years on the fine lees; batonnage is performed and it is bottled before the summer heat. After six months of refinement in the bottle the product can leave the cellar. It is a straw yellow color that ranges from pale to deep depending on the refinement phase that presents itself to the eye. On the nose it presents itself intense in the complexity that allows the foundations of the vine to be found in the citrus fruits, this time sweeter, in the aromatic herbs, in the enveloping and well-balanced minerality.
Campania IGP Beneventano Falanghina 100% Monte Cigno is a Falanghina vinified in purity. A still white wine with a straw yellow colour. On the nose floral and white pulp fruit notes. A wine with a good structure, well balanced and of great freshness. The family-run company takes its name from the ancient Samnite tribe that populated the Benevento area. There are 10 hectares of property dedicated to the cultivation of vines. The vineyards are located on the hills of Sanno Beneventano, between the heights of Monte Taburno and those of south-eastern Matese. We work with respect for the environment and aim exclusively to produce quality wines. The land is cultivated naturally without the use of pesticides and in the cellar the fermentations are spontaneous for the reds while for the whites a mixture of indigenous yeasts is used.
