NAME Franciacorta Rosé. VARIETY OF GRAPES Pinot Nero 80%, Chardonnay 20%. VINEYARDS OF ORIGIN 12 Pinot Nero vineyards, with an average age of 31 years, located in the municipalities of Erbusco, Adro and Passirano. 4 Chardonnay vineyards planted an average of 26 years ago located in the municipalities of Erbusco, Cazzago San Martino, Iseo and Passirano. ASSEMBLY Pinot Nero coming exclusively from 2019 vintage wines. 10% Chardonnay coming from 2018 vintage reserve wines and the remaining 10% from 2019. 2019 harvest wines. The winter season passed with mild temperatures and scarce rainfall. These conditions led to an early spring. From the second week of April the climate has definitely changed and until the middle of May the rain was the protagonist with temperatures below the average. These weather conditions compromised flowering and caused spinning of the wings of the bunches and flow of flowers, resulting in smaller, sparse bunches with very low average weights. After May 15th we saw a clear improvement in weather conditions and at least the fruit set took place in favorable conditions. Temperatures above average characterized the month of June, which can be classified as the driest of the last 20 years. The dry weather continued until mid-July with the vines starting to show symptoms of water stress. The beginning of August brought us the much desired rain which saved the season. From the 20th of August, with the beginning of the harvest, the temperatures returned to normal and the good weather accompanied us until the end of August. Harvest took place from 22 to 24 August, with an average yield per hectare of 4,380 kilograms of grapes, equivalent to 2,590 liters of wine (wine yield: 59%). VINIFICATION The Cuvée Prestige Rosé comes from the separate vinification of Pinot Nero and Chardonnay grapes. All the grapes, harvested by hand in small boxes, are classified and cooled. Each bunch is selected by expert eyes and hands, to then benefit from the exclusive "terme degli acini". A particular system of washing and hydromassage of the bunches, through three soaking tanks and a drying tunnel. The Pinot Noir grapes, once transported over the vat, are separated from the stalks and the berries fall inside them, from above, by gravity. The "pink" maceration is carried out for 24-36 hours: only a few hours to "seize the moment", that is to obtain that particular and delicate shade of pink that distinguishes Franciacorta Rosé in the bottle. Then the must, separated from the skins, ferments in small barrels and steel vats at a controlled temperature. Chardonnay grapes are vinified in the traditional way, with pressing of the whole bunches. The best fractions of must ferment in vats, separately. After 7 months of aging, the “magic rite” of creating the cuvée begins, blending the Pinot Noir and Chardonnay wines. The cuvée thus obtained is bottled and aged on the lees in underground cellars, at a constant temperature of 12 ° C, for an average period of 30 months. The dégorgement takes place in the absence of oxygen, using a unique system in the world, designed and patented by Ca 'del Bosco. This avoids oxidative shocks, further additions of sulphites and makes our Franciacortas purer, more pleasant and longer-lived. One of the key steps in the production technique of a great Amarone consists in withering, the moment in which the grapes acquire greater concentration and favor the development of a rich aromatic profile. Placed in boxes in large air-conditioned and ventilated rooms, the grapes are kept at controlled temperature and humidity, in order to obtain the right degree of drying for each of the varieties that will make up our Amarone. Refinement The longest phase for the production of Amarone is refinement.
