SPAIN. Additional Information Miguel Torres' Vina Esmeralda is a wonderful cuvée white wine from Muscat d'Alexandrie (85%) and Gewürztraminer (15%) grape varieties. This white wine shines in the glass in a delicate yellow tone with green highlights. In the multi-layered and seductive bouquet, floral notes of lime blossom and acacia unfold, as well as fruity aromas of fresh muscat grapes and notes of passion fruit. On the palate, this Spanish white wine shows a lively and fresh acidity, a silky texture and a wonderfully aromatic fruit. The finish is accompanied by notes of pink grapefruit. Vinification of Miguel Torres' Vina Esmeralda Blanco The Muscat d'Alexandrie and Gewürztraminer grapes are fermented at a controlled temperature in stainless steel tanks (16 ° C). The wine is also aged in stainless steel tanks. Thus, this white wine retains its fragrant freshness, its aromatic fruit and its lively and fresh acidity. Name Costa Arente Amarone della Valpolicella Type Still red DOCG classification Amarone della Valpolicella Format 0.75 l Standard Alcohol content 16.50% by volume Vines 50% Corvina, 15% Rondinella, 20% Corvinone Country Italy Region Veneto Location Grezzana (VR) System of breeding Pergola Veronese Yield per hectare 20 hl Harvest Between the end of September and the beginning of October, the grapes are harvested by hand and placed in boxes to be taken "to rest", that is to dry. No more than 5 kg of grapes are placed in each box, to allow proper ventilation of each bunch and ensure homogeneous drying. One of the key steps in the production technique of a great Amarone consists in withering, the moment in which the grapes acquire greater concentration and favor the development of a rich aromatic profile. Placed in boxes in large air-conditioned and ventilated rooms, the grapes are kept at controlled temperature and humidity, in order to obtain the right degree of drying for each of the varieties that will make up our Amarone. After 100 days the grapes, depending on the variety, have lost from 30% to 35% of their weight and are ready for vinification. Vinification The grapes are checked cluster by cluster before being de-stemmed: this ensures that only the best are selected to become part of our Amarone. This is followed by pressing and vinification in steel containers at a controlled temperature: slow maceration for 30 days, 12 of which cold, with 3 punching down per day to facilitate the extraction of polyphenols, such as tannins and anthocyanins, present in the grape skin. Refinement The longest phase for the production of Amarone is refinement. At the end of May the wine is transferred to oak barrels of different capacities, 25 hl and 5 hl, where it rests for over 36 months. Before bottling, the two masses are assembled. Total acidity 6.00 gr / L Residual sugars 8.40 gr / L Vintage production 20,000 bottles Allergens Contains sulphites Matching Excellent with tasty meats such as game, both fur and feathers. Seasoned and tasty cheeses, meat-based first courses. Also ideal at the end of a meal to accompany a moment of relaxation dedicated to oneself.
